About this recipe

The classic weeknight stir-fry, built for speed — everything cooks fast over high heat, and the kadai's shape keeps ingredients moving without spilling over the edge.

Ingredients

  • 200g firm tofu, cubed and pressed
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 broccoli head, cut into florets
  • 1 carrot, sliced
  • 1 capsicum, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Sesame seeds, to serve

Method

  1. Heat 1 tbsp oil in the kadai over high heat.
  2. Fry the tofu until golden on all sides, then set aside.
  3. Add remaining oil, then garlic and ginger, stir for 30 seconds.
  4. Add broccoli and carrot, stir-fry for 3–4 minutes.
  5. Add capsicum and stir-fry for a further 2 minutes.
  6. Return the tofu to the kadai.
  7. Add soy sauce, oyster sauce and sesame oil, toss to coat.
  8. Sprinkle with sesame seeds and serve immediately over rice.

VH Kadai Tip

High, even heat retention means vegetables stay crisp rather than steaming — key to a proper stir-fry texture.
